بني ملال خنيفرة
The Amazigh heart beats in every argan kernel
The story
At the foot of the Middle Atlas, where cedars descend toward fertile plains, Amazigh cuisine is an ode to the nourishing earth. Amlou, roasted almonds, argan and honey paste, is the king's breakfast here. Tafarnout bread, baked under ashes and pulled smoking from the earth, has the flavor of simple things that truly nourish. This cuisine doesn't impress: it sustains, it comforts, it brings you back to what matters.
Best season
Spring and autumn, when the Atlas is in bloom
Specialties
Dense golden paste of roasted almonds, pure argan oil and mountain honey. Eaten at breakfast with warm bread, it's a revelation.
Berber barley and semolina bread, hand-kneaded and baked directly under embers. Its smoky crust hides a tender crumb that tears with the fingers.
Whole barley couscous, more rustic than wheat, served with highland lamb and seasonal vegetables. Nourishing and deep.
Grilled lamb liver wrapped in caul fat, seasoned with cumin, salt and chili. Served immediately off the fire, smoking and fragrant.
