The oases where the date is queen and patience is an absolute virtue
The story
In the palm groves of Tafilalet, cradle of the Alaoui dynasty, cuisine is a meditation. Without the abundant vegetables of the North, without coastal fish, the inhabitants learned to sublimate the little they had: the date, the lamb, the spices of the caravan routes. Gueddid, meat dried and spiced in the desert wind, was the journey itself: compact, durable, full of held aromas that explode when cooked.
Best season
Autumn, the date harvest transforms the valley
Specialties
Lamb braised with melting Medjool dates, almonds, honey and ras el hanout. The sweetness of dates transforms the broth into an amber nectar.
Lamb dried in sun and wind, marinated in spices and salt, then preserved in fat. Rehydrated and braised, it reveals an incomparable aromatic depth.
Tafilalet version: oasis almonds and walnuts, date palm honey, argan oil. More intense, darker than its Souss cousin.
Fine semolina couscous garnished with whole dates, raisins, caramelized onions and lamb. A festive dish of the great Drâa families.
